Cuba’s history is perhaps best told through her people’s cuisine. The island has rich soil and abundant sea life along its shores. The Taino Indians (Cuba’s aboriginals) began the island’s rich culinary journey using these plentiful ingredients. The conquistadors brought their love of meat to the island. African slaves infused a love of spices like cumin and bay leaves. And most recently, the Revolution of the 1950s resulted in a deep ethnocentricity, reigniting the importance of authentic Cuban dishes.

While preparing sumptuous, traditional dishes with Chef Pascual, you become intimately aware of the cultures and events which shaped today’s Cuban food.
